Dinner Party Appetizer: Honeyed Goat Cheese Crostini

Let’s make entertaining friends and family less about entertaining and more about time together. One of the easiest ways that we make hosting more about the people and less about everything being perfect is by asking everyone to chip in and bring something. I’ve yet to find a friend or family member that wasn’t willing to pick up drinks, make a salad or side dish, or bring some chicken or steaks for the grill.

The trick? You have to ask. ;)

Be bold, invite people and ask them to bring something. While they’re helping fill the dinner table you can get busy making this flavor packed appetizer that we created at our last Freedom Dinner!

Honeyed Goat Cheese Crostini(1).png

Honeyed Goat Cheese Crostini

  • 4 Tablespoons Balsamic Vinegar

  • ½ cup Granulated Sugar

  • 1 teaspoon Ground Ginger

  • 6 stalks Rhubarb, Diced

  • 2 Tablespoons Lemon Juice

  • 2 Tablespoons Olive Oil

  • Salt And Pepper, to taste

  • Sliced Baguette

  • 4 ounces, Goat Cheese

  • 2 Tablespoons Honey

  • ½ cups Chopped Mint

  • Edible Flowers (if in season)

To Prepare:

In a small pot combine balsamic vinegar, sugar and ginger and bring to a simmer. Add the diced rhubarb and cook for 10 minutes. Transfer rhubarb with a slotted spoon to a bowl and set it aside. Continue to cook the vinegar mixture until thick, about 5 minutes. Then add the rhubarb back in. Remove from the stove and set aside.

In a small bowl mix the goat cheese and honey together. Set aside.

While the rhubarb mixture is cooking, mix the lemon juice and olive oil together seasoning with salt and pepper. Spread the lemon oil over the sliced baguette and broil until toasted. While the baguette is still warm, spread goat cheese over the warm toasts, add a spoonful of rhubarb compote then top with mint and edible flowers if in season!
